I am incapable of baking without injuring myself.

  This is no lie. I cannot bake without injuring myself in some way or another. My most recent incident involved a can of tuna and a knuckle that needed to bleed. And bleed, it did. I was making a second batch of banana muffins with cream cheese filing and decided to make tuna sandwiches about half way through my muffin makin'. It's been three days and it still bleeds. But hey, that's life. I should take pictures of all my baking adventures and corresponding injuries. You know, just for the record.

But, that's not really why I came here today. I owe you an explanation and a list of WHAT I AM EATING THIS WEEK.

I'm lazy. I forget to post. I've been busy. Which one works for you? Anyway, here's my list.

WHAT I AM EATING THIS WEEK:

Sunday: Banana Muffins - Includes a creamy cream cream cheese filing!
Monday: Tuna Sandwiches - Made with leftover tuna salad
Tuesday: Corona Chicken - You've seen this on the list before
Wednesday: Green Chile Enchiladas - This is one of Ryan's favorites. I make mine a little different than most.
Thursday: Green Chile Meatloaf - A loaf of meat with green chilé and jalapeños served with mashed taters and chipotlé gravy.
Friday: Red Beans and Rice - Kidney beans with white rice and jalapeño cheddar sausage.
